Barfi by robot: cleaner cuts and a calmer Diwali for an Indian sweets maker

26 September 2025

The challenge

For an Indian sweets maker, Diwali is the Christmas rush, Valentine’s Day and every wedding season rolled into a few weeks. Everyone wants a box of mithai, and every box needs neat, even pieces.

Our customer, a small sweets maker in Australia, cut every slab by hand. Barfi and other set sweets were poured into trays, left to set, then cut with a knife into squares and diamonds. It works, but it’s slow, and a knife drags through soft, sticky product. Pieces came out uneven, edges got messy and some product was lost. When festival orders came in, the only way to keep up was longer shifts.

What we built

We built the RSC-200 Robotic Slab Cutter in our Berwick workshop. A robot carries an ultrasonic blade. The blade vibrates so it passes through the product instead of pressing on it. Soft layers stay in place, toppings like silver leaf (vark) don’t tear or drag, and sticky product doesn’t build up on the knife.

  • Any pattern. Squares, bars or the diamond shapes mithai is known for, saved as recipes on the touch screen.
  • Manual or automated slab feeding, depending on the line.
  • Optional servo-driven distribution that spaces cut pieces for manual packing.
  • Easy cleaning, with a hygienic stainless steel frame and food-grade plastics.

The machine cuts rectangular slabs up to 400 × 700 mm, or round products up to 400 mm across.

The result

Barfi cut into even squares, with a few pieces lifted out

  • Cleaner, more accurate cuts. Every piece comes out the same size, with clean edges, so boxes look right and less product is wasted.
  • More output. The robot cuts a tray in a fraction of the time it took by hand.
  • Fewer shift hours. The team spends less time cutting and more time making and packing.
  • Room for the festival rush. Diwali orders can be met without long extra shifts.
